Dress Shirt Question

Hello, I am currently buiding an order on "mytailor.com." I so far have added a white and a light blue both with classic spread collar (different then traditional spread), square French cuffs, no pockets, french front, and no pleats in the back. These shirt will be my formal shirts (and when I say formal I don't mean tuxedo formal, I mean formal as in wearing a suit to a wedding). Now I got up to dress shirts for work (running around in courthouses, I'm a attorney) I chose 12 whites and twelve different kinds of blue that vary from light to french blue. Then for the styles I chose classic spread collar again, round one button cuffs, one round pocket (to compliment the round cuffs), a placket front, and then came the back stlye. I could choose between no pleat, box pleat, inverted pleat and side pleats. Which one? I also chose contemporary stitching for both my work shirts and formal shirts as opposed to classic stitching. So first please recommend to me what you think the best back style would be for me. Also, what exactly are back pleats for? Any other constructive criticism please on anything I mentioned like the colors etc. would be a big help.
