I have a watch that's silver, but the buckle that came with the strap I ordered is gold colored. I know the buckle can be changed, but wondering if it even matters...

I think even a combination of silver watch, gold buckle, or vice versa would bother the hell out of me. But it's strickly a personal choice I suppose. You'll spend a great deal more time staring at it than anyone else, so you're the only one you have to please.
Same here, I couldn't wear a combo like that. I just couldn't, no way.
It's the kind of mismatch that would bother me. But I'm more neurotic than most; then again, so is everyone on this forum when it comes to these matters.
