I don't own a pair of White's but I'm currently working on a build so I thought I'd chime in and try to help where I can.
1) I think you might be ok with or w/o the celastic toe. Again, I don't own a White's dress brown but I've handled a dress brown and read quite a bit about the leather in this forum. It feels like a very tough leather as long as people aren't stepping on your toes often you should be ok.
2) I typically prefer some contrast between the sole and upper. I'd say go with brown or even natural looks sharp with dress brown.
3)I like the Cuban heel. Looks different, refined, and is more comfortable to walk in. I've tried on a standard height Cuban and standard height block heel - the Cuban heel just felt right.
