In the past two weeks I've gone from 183 at about 12.5% body fat to 191. Didn't get a chance to measure my body fat.

Diet has remained relatively constant and I've been working out as normal 5-7 days a week doing mostly plyometrics. I feel a little flabbier and I'm shocked because I haven't been above 185 in forever. 180 seems to be my ideal weight and I've been trying to get back down to it so this is dispiriting and I don't really know how to turn the dial. FYI I'm about 5'10, 32.5 inch waist

A) How is this much short term weight gain possible?
B) How much water weight fluctuation have you guys actually experienced?
C) How quickly can your body actually gain three - five pounds of fat?

You omitted quite a lot of details that would help to explain some of that scale weight gain.

Are you weighing yourself always at the same time?
Are your hydration levels always the same?
Have you defecated or not?

Gaining a pound of fat takes something like 3500 cals per (ballpark) over your maintenance, and even if you did put away those amounts of food, it's very doubtful you'd gain ALL fat.

All in all, I wouldn't really worry about it if your diet hasn't changed much - just drop the calories down patiently if you need to lose a few pounds and see what happens.

+1, gaining 8 true lbs would mean you have eaten 28000 more calories. We both know that it is simply not true.

If you want to use the balance to measure your progression, you must be certain to use it at similar period of the week (for example, each monday when waking up) as our weight tend to vary a lot during the same day. You may have simply eaten a lot more carbs than usual or sodium and just got a water bloat. Dont worry, it will go away if your diet stay constant.

I weigh myself in the morning. 2 weeks ago I consistently was between 183-185. That's where I've been for a year. The last few days I haven't seen a number lower than 189. I guess my question is, are water weight fluctuations only day to day or can we have substantial shifts in weight over a 2 week period or so.

What's your salt intake like? Lay off the salt for a few days, drink a lot of water and see what the scale says.
