Can different red wines hit you differently (hangoverwise)?

Well, there's a reason for that. Organic grapes are untreated of course. Even treated grapes have millions of microbes and wild yeast cells on their skins; organic will have many more. SO2 is used to kill microbes and wild yeasts and these do not get killed in "organic wine." Now, SO2 is one of the natural byproducts of fermentation, so there is no such thing as a sulfite free wine. Even organic wines can have up to, I think 100 ppm of SO2. Either way, organic wines are not meant for aging, and they will sour fast (turn to vinegar) in the bottle, as you need a little extra SO2 to kill the unwanted microbes to allow wine to age.
