Business dress in Paris and Madrid

I'm heading to these cities in the near future on business trips and was curious what defines business dress in these cities?

Among other things, is other things, is either like London where black shoes are the rule?

In Madrid you can see a lot of guys wearing loafers with their suits. I have been here since the early 90s, and it still looks wrong to me.
Also, in business environments: nobody (or almost nobody) feels that it is tacky to have visible monograms on the shirts (chest or cuff) and at least one working jacket sleeve button ubuttoned. Maybe one of the main differences that I notice compared to, for example, Germany and the U.S.
