Who boils meat? I made a thread about boiling pork shoulder in order to make carnitas and got flamed. So I was wondering if there were any good dishes where boiled meat is a key component. One example would be Vietnamese spring rolls that have boiled pork belly.

A basic dish in Vietnamese cooking is to take a piece of meat, boil it, and eat it with a sauce. When cooked properly, i.e. the meat not dried out, it can be a tasty dish.

To answer your question, I don't boil meat much. But, when I cook a Pho broth, I usually put some beef shank in there. The meat comes out fantastic every time.

Corned beef and cabbage. timely, too. But I usually do mine in a slow cooker.

No. You don't eat it with the broth.

I prefer to braise. Adds more flavour and isnt as harsh of a cooking method as boiling

Bollito Misto is very typical in Tuscany and Piedmont. It has many ingredients but google it and you will see that boiled meat doesn't always = soup.

You'll get soup/broth as a result of boiling meat.

I do occasionally boil goat meat to reduce the time it'll spend on a bbq grill.

Soups and stews both boil meat. Sometimes brats and hotdogs, kielbasa, etc. Shrimp and some other seafoods, especially lobster.

I've recently been experimenting with tacos and technically, I boil the meat. I put country style (i.e. cheap and randomly cut with few bones) pork ribs into a crock pot and add stewed tomatoes, an onion, water and seasonings, then leave it on low for 8 hours. The water does boil so the meat is being boiled. It comes out delicious, falls off the bone.

However the idea of just throwing a piece of meat into plain boiling water to cook it makes me feel ill.
