Isen't it hard to dress burgundy down?
The style of the shoe has more to do with the level of formality than the color. I own cordovan bluchers, loafers, and monkstraps that can be very casual (the bluchers and especially the monks can be dressed up or down. The penny loafers are casual).
With darker charcoals do you still use brown? I feel like black or burgundy are the only options there
