"Larousse Gastronomique" is a classic that everyone should own. For something different and interesting, "100 Classic Dishes of Austria" by Ewald Plachutta.

I love the stuff in "Kitchen Confidential" about Tony the mad scientist trying to recreate all the crazy ornate presentations from Larousse.

I, also, like Cooking by Peterson.

At the moment I'm waiting for In search of perfection , by Heston Blumenthal. I very much liked his programme.

One of my coworkers worked on those recipes. He was entirely responsible for the Baked Alaska, and helped with many other ones. His name is even in the acknowledgements. Pretty badass.

Have been going to Jose Andres - Tapas: A Taste of Spain in America quite a bit over the past few years.

I own many of the books mentioned upthread and refer to Bouchon, FL along with Gordon Ramsay's Chef For All Seasons regularly.

+1 to Julia Child, Elizabeth Davis, Marcella Hazan, and Harold McGee. McGee's book is strangely addictive.

I also like Claudia Roden and Paula Wolfert. Wolfert's book on the cooking of the eastern Mediterranean is a gem.

I find that Mark Bittman's How to Cook Everything is a great replacement for the Joy of Cooking.
