I have a 31 waist and I workout, so my thighs and ass are a little bigger than average. Should I go for a slim fit or a relaxed fit. I have some Banana Republic Gavin Chinos which is a slim fit in 31, but I feel like it would be more comfortable if the seat was roomier. Should I go up in size or go for a relaxed fit? Only thing about going in size is that I don't want my waist to bunch up when I have a belt on.

Go for the trousers that fit you in the seat/thigh area and then have the waist adjusted.

Sounds like you should try the relaxed fit in a 31 or the slim in a 32, but it really depends on your precise body shape, etc. The reason you haven't gotten response is likely that no one can answer your question but you, by trying on the pants. I'm afraid there's really no way around it but either finding a brick and mortar store to try them on in, or ordering multiple pairs and returning the ones that don't fit.

Yeah, I will go have to try both, but I was seeing if there was anyone with a similar build. Slim but athletic, so my hips, thighs, and butt are a little bigger than average. Just wondering if they usually go for a slim fit going one waist size up or going for a more relaxed fit.
