Should the scales stay flat and look like plastic or some edges of the scales can "unglue" and look like dry?

Are you referring to lizard?

The belly or the top of the alligator?

Personally, I think any part of the animal that is NOT the belly is... ugly.

Do you mean that one part will have scales that goes off?

If you are looking at real alligator skin, the scales should never "unglue" or look like they are peeling - they should stay flat, but not as flat as plastic either. In general, if the scales pattern looks too perfect, then one may suspect that he is dealing with printed/embossed leather.
