My vintage Chesters from 1988 have a 1903 code in them. I believe that indicates the 3 last?

Correct, also called the 73 last. It had the largest girth for high vamps of all AE lasts at that time.

He does have a really impressive collection for sale (many in my size). Most of the ones in my size are polished cobbler, so that's why I haven't been more interested.

Is there an easy way to identify polished cobbler?

If it's new, it's very shiny and it will usually have a much more consistent color all across the shoe. Calf and shell will have more variation within the color. If it is used, polished cobbler will often have more obvious creases.
