    Yeah, at home I'd get a lot more use out of a 240mm, but when I was doing hours of bulk prep a day big blades like that were great for doing things like julienning both halves of an onion at once etc. to save time. Conveniently, the 240s are a lot easier to find.

    The trick to justifying both lots of squares and lots of outerwear is to wear a separate square in both your suit coat and your overcoat, each carefully chosen/purchased to complement the outfit in each form.
