Yeah, at home I'd get a lot more use out of a 240mm, but when I was doing hours of bulk prep a day big blades like that were great for doing things like julienning both halves of an onion at once etc. to save time. Conveniently, the 240s are a lot easier to find.- Oldsrocket27

If by Japanese/German hybrid you mean a Japanese style blade with a western handle, there's a surprising amount of options.
