    Let's talk about sushi...

Wait I thought edomae places typically cure\vinegar especially since most hikarimono goes bad pretty quickly.

    Let's talk about sushi...

So I got a bit of clarification. LA places for the most part dont do the whole dry aging and curing of fish except for Q Sushi, or heavily vinegared.

    Let's talk about sushi...

I havent been to LA in over 15 years, but I keep hearing that LA sushi is its own style, and that it shouldnt be compared to edomae sushi that you would find in Tokyo, or NY. What makes it different?

    Let's talk about sushi...

Finally went to Mizutani, it was pretty flawless, rice was bit softer than I expected. But I had more enjoyable meal at Daisan Harumi.

    Best sushi in NYC

I went the end of June. Off the top of my head I was served some shiokara, engawa with the liver, some abalone with liver too. I hear some of the high end places got hit with C ratings because the chefs want to keep the fish at a much warmer temp than the DOH wants. My favorite yakitori...

    Best sushi in NYC

Nakazawa is very good, strictly sushi and melon at the end, tries to be Jiro without the 20 minute rush, no tsumami, no amuse, no sashimi, no cooked foods. He experiments a little bit, like using mustard in akami, smoking fish in hay he found at petco(not sure if he was kidding). I usually...

    Best sushi in NYC

Yasuda is just partner, sushi chefs need a money man to pay nyc rents. Ichimura is very well respected and he is "real sushi." He had his own place in the UES for years before he and Yasuda left Hatsuhana, now he works for Bouley. http://fujiko55.livedoor.biz/archives/52302149.html Might...

Newsflash, most of the well known places are owned by non Japanese people. Ichimura@brushstroke is owned by David Bouley Seki himself happens to be chinese I think, Kayakou. Gari, one of the owners is Chinese. Jewel Bako is owned by a white guy and korean lady. Yasuda is owned by a white guy too.

    Best sushi in NYC

15 East is my go to. I prefer it over Yasuda. I'm still on waiting list for Ichimura. I'm pretty much done with Kanoyama, my last bill there was near 300 and I could have 2-3 meals for that much at Ushiwakamaru or 15 East. There's a few new modestly priced places to check out like...

    New York Michelin Starred Restaurants

LOL @ 2 okay Chinese restaurants that deliver to my office on Seamlessweb getting 1 star each. Picholine has been closed for a while. Seems like the key to getting 2 or 3 stars is long 3-4 hour 10-22 course meals. Gordon Ramsey, Gilt, Aureole, who the hell eats there?

New York Vacation: Looking for restaurants recommendations

Skip Kajitsu, the original chef who earned the place 2 Michelin stars, Nishihara san left back in April, and the place has not been the same since. The new chef is not very creative or as skilled as the previous one, and has a lot of trouble working with local produce or non Japanese herbs\spices.

    Top Chef Masters

I bought Takashi Yagihashi's cookbook, probably the worst Japanese cookbook I have ever read. Every broth recipe was pretty much throw everything into a pot and boil. No techniques on how to prep bones, extract blood and minerals from a stock, how long to steep katsuobushi, recommends regular...

Can restaurants in California pull what Chicago restaurants did and give the foie gras for "free" and charge say $25 for condiments and bread?
