Run that by Escoffier. Perhaps I should have said it was not common in published recipes before the 1970s. I have already conceded that celery is common. One recipe for mirepoix from a recognized authority on french cuisine is all I require to show that celery is unecessary.- Tench

Gillette Fusion Razorblades...is there a deal?
Rinse your razor with alcohol when you are done using it. What causes the blades to dull is not your hairs chipping the edge, but rust caused by water left on the blade. Fusion blades are stainless steel. No rust. Now you know.- Tench

Soave tends to have slightly more body than acidity compared to things like a steely Sancerre, though I have had one or two that came off as flabby. Soave doesn't travel well.
