    If a local cobbler was to re-sole the shoe via goodyear welt, they would have to take off the beveled/fiddleback waist part of the sole as well correct? And if so, would they be able to remake the beveled/fiddleback waist again after applying a new sole?

If you're looking for a sleeker shoe, italian construction (aka Blake stitching) or Bologna is the way to go (doesn't mean you can't still get sleek shoes with a goodyear welt or hand welt, etc).
