I have a coat very similar to this one with a black and white herringbone pattern.

Should I go with a solid color like black or a grey plaid scarf?

Sounds like overthinking. Scarves for everyday menswear generally should be non-white neutrals or perhaps dull versions of some non-neutrals. Brighter colors can work, but they can also look flashy or effeminate. A scarf probably shouldn't be in a very similar color to the outerwear, lest the two items appear to be one from a distance.
