Best food shows - Page 2

In general, I like Bourdain and Ramsey. No Reservations is one of my favorites.

Mario Batali was good, but I bored of his show rather quickly. I do like his cookbooks though.

3 things about him:

1) the rules of iron chef are that 5 of your points are based on originality, yet batalli always claimed his recipes were from his grandmother in italy. therefore, he should not have scored any points for originality. he should have lost every time.

2) i saw him interviewed by charlie rose and he came off as a redneck, going on and on about nascar being 'sexy', with little else to say.

3) his restaurants on the corner of melrose and highland are tacky.

Hmm, well, firstly, everyone in food gets things from somewhere. Most things you'll see in Michelin restaurants are an homage to an old french or italian classic. Secondly, Iron Chef doesn't really allow you to use old recipes, especially if it's some kind of ingredient that forces you to do something outside of the box. Just because his grandmother's basic recipes (and that's a marketing tactic more than anything else) are the basis of his rustic italian cooking, doesn't mean it detracts from the originality of the off the wall ideas he's had on the show. I can guarantee you that his grandmother wouldn't be able to do what he does there.

whether his statements were true or not is beside the point. during the tasting portion of the show, when someone would compliment him on a dish, he would say, "thank you. that's a recipe from my grandmother. she used to..."

so according to the rules he was not being original. no points for originality.

You are retarded.

Do you not realize that most of those dishes come from a basic, classic recipe that every fucking retard who went to culinary school or opened a basic cookbook knows?

What's the difference if it comes from your grandmother or the books you had in CIA? Also, having a recipe has never, ever been the mark of a cook. I can give you the book of Aschatz and I would be floored if you could even do the mise en place for ANY of them. A recipe is nothing. His grandmother didn't have his technique, did not have his plating, and did not have his palete.

That includes Cora's greek food, Morimoto's constant references to basic Japanese dishes, and Bobby Flay making french food with southwestern flavors. Recipes are worthless next to technique, produce, palete, and plating. Literally worthless.

it makes no difference to me, but it was in the rules. perhaps it was stupid to include originality in their scoring, but they did. how do you give a guy full points for originality if he tells you he got the dish from his grandmother? if the other chef's food tasted like crap, but it was his own creation, he should get full points for originality even if he loses overall.

You don't understand. It is pointless. Carry on.

And this means his food is bad? I'm not real concerned at all with what happens on Iron Chef actually. It is a game show.

And this means his food is bad? We all have our little quirks. I eat things like organ meats. Many people would claim that makes me a redneck as well.

And this means his food is bad? He's a chef, not an interior designer. Unfortunately some folks just don't have good taste for interior design.

I generally judge a chef by their food. In the case of Bourdain, I'm more interested in his show No Reservations because I too like to travel and get a feel for the local food. I don't actually know that I've ever seen him cook anything or seen a cookbook by him. Oh well.

where exactly did i say his food was bad?

it just irks me that he would often win by a point or two, and he would have lost if his scoring on originality had been honest.

It just appeared that you were judging him as a chef by things unrelated to the key measure of a chef. . . his food. Sorry if I jumped to an incorrect conclusion.

I agree that matador never said his food is bad. However you must understand that in some basic ways, no food is actually original. Unless you eat at Moto where they're giving you edible paper or you're eating a frozen beat orb from El Bulli, you really aren't eating anything original. Instead, it has to do with taking something that everyone knows, turning a concept on its head (could even be a play on words, which is common on Iron Chef), and being original with the concept rather than the basic ingredients. It's almost impossible to really be original as far as the basic recipe or ingredient, but there is so much more to food than that, at that level.

I don't know as much about clothes, but it's like telling a layman or look, that's a Thom Browne suit. Would he say it's original? No, because to him it's pants and a jacket. But, to someone who can look at it on a deeper level, it is a world apart from a traditional suit.

Your view on originality is far too prosaic. The dish is influence by his grandmother'd recipes, being that the main ingrediant is random and they are cooking from a vast but still limited amount of pantry items, the recipe/dishes still has unique aspects. Unless your view is anything influenced by something else is unoriginal.

you don't get it.

you can't give a guy 5 out of 5 points for originality when he flat out tells you "every old lady in vicenza makes this dish. it's been around for hundreds of years. i got it from grandma batalli, enjoy."

he may deserve 5 points for flavor, presentation, every other category, but not originality.

I have never, ever seen him do something on that show that an old lady can do. If they can, I'd really, really like to meet them.
