For Christmas Eve, a very simple pot roast made with baby carrots, celery, onions and save a glass for myself, a bottle of red wine. Plus, french bread. I thought about asparagus and mashed potatoes, but going to make them for Christmas Day instead. Found a fresh organic turkey and have it soaking in a store-bought apple-sage brine overnight. Plan to insert lemon zest & thyme-infused butter under the skin and maybe cram the inner cavity with the lemon plus a bunch of fresh herbs like thyme, rosemary and sage. Will make stuffing, mashed potatoes made with cream, assorted veggies and mash fresh cranberries with lemon & oranges. Probably use the giblets with some mushrooms and the pan dripping for gravy and am thinking of what to do for dessert (other than ice cream).

I know. It's all working against me. Even if I make mega-bucks, I am destined to be nouveau riche.
