Ray's Hell Burger is the only place I'd dare eat a burger that rare. On my first visit, when I looked at the cooking temperature chart, and saw 3 options: Recommended, Medium, or Well -- I had to order the way the chef intended. The meat is ground in house, in small batches, as needed. The beef doesn't sit around at all. It gets unpacked, trimmed, and ground within 6 feet of the grill. It is the best burger I have ever had.
