I have those Messermeister knives as well, and I've also had the opportunity to try out multiple Shuns and a chef even let me use his Shun set during class for a few days. There is really no comparison. Don't get me wrong, Messermeister knives are pretty damn good, and I'm completely happy with them. But Shun is next level. Srsly.
You're in cooking school and you know how people get about their steel. I have used these knives for five years and I love them.
I don't like the weight of the shuns or most Japanese steel, if I had to choose one Axis power to make my knives, it would be from the country that slaughtered my relatives in WWII, that would be Germany, man.
