Turkeys are fine if they are small. As they get enormous, they get terrible.
I agree 100%. Any ideas why this is the case?
Last night, we had a turkey roasted a la the Joy of Cooking, which instructs the cook to rub a lot of butter into a damp dish towel and drape the towel over the bird in the oven. The results were great.
I also recommend kosher turkeys--no need to brine.
So far it seems like duck or goose is a the top of the bird pyramid here on SF, but I just realized that I never crave either of them. I order them in restaurants every once a great while, but I never crave them like chicken.
Well while I do love the taste of duck, what essentially shies me away is the fat. I have to have a roll of paper towels to roll the pieces of duck in before I eat it. So it tends to get really messy with me.
