I can think of at least three reasons: (a) the Hunt Derby is the iconic Weston shoe and retails for a much higher price (about 50% higher, I believe, or even more) than the Demi-Chasse, #598 (which I really like too, and some prefer to the Hunt Derby; still it isn't the same shoe!), (b) the Hunt Derby here, with very little wear, will probably go for far less than $600, and (c) those with a slightly narrower-than-standard foot will get a better fit with these C-width shoes than with the D-width-only available at Sky Valet with the Demi-Chasse.

Heh, you guys are crazy. You can keep your dainty lil shoes for casual I'll stick with my Budapests, and if I ever get lucky enough, Hunt Derbies.

As far as the Hunt Derbies vs the regular demi-chasse, they only look similar in pictures. The Hunt shoes are much more substantial in person. I'm not a particular fan of the regular Demi chasse, looks too much like my Paraboot Avignon's, but I love the Hunt shoes.
