Some tasty sounding menus here. I don't have the whole menu, as my wife is doing some stuff. Partial menu includes:

Applewood smoked turkey (20# bird, about eight hours in the smoker I figure)
Homemade celery and bacon dressing
Brandied yams
Garlic mashers

No idea about the rest of the menu.

Wines to include a white Italian bubbly, la Spinetta and then whatever I feel like out of the cellar.

Mine is completely off the wall - just cooking a meal for a friend who wanted me to cook something "local"; I don't do anything on my own accord for Thanksgiving anyway so I was fine with that.

Fried aubergines in yoghurt & garlic
Coarse bulgur wheat cooked with onions, vermicelli & vegetable stock
Some sort of dough dumplings fried in olive oil with sesame & honey (found the recipe in a book with Hellenic recipes from antiquity).
Probably something else too as a starter, undecided.

Making a small turkey, about 12 pounds.
Then a crown roast of pork, which, in my opinion, makes for some dynamite presentation:

I'm making an apple stuffing, a butternut squash risotto, mashed potatoes, a bunch of other regular Thanksgivey type stuff, and some hors d'ouevres to start with. I may make some polenta, and I might make a dish featuring morel mushrooms.

The desserts should be great as well. The main one is a spicy pumpkin tart, which is just awesome.

actually my gf is in charge of the mochi. She knows how to make plain mochi, and is going to try to bake some pumpkins and make a filling.

Is your friend a vegetarian? Anyway, this sounds delicious. I'm hoping for some eggplant parm or lasagna.
