okay I am posting a mini tutorial now

start with a sligtly larger collar

 

flip it up

fold the tip back on it self and sew along the edge

badda bing you have yourself a cutaway collar

disregard the button down collar buttons those can easily be taken off, I didn't actually convert this shirt I just did it for demonstration purposes

Do you cut off the excess? It seems like it would be rather bulky. Actually, it seems like it would be rather bulky either way. How does that work out?

on a diffrent shirt I might need to cut off the excess but on the shirt I first did it on it was very thin and the excess fabric acted as a collar stay and gives the collar some shape. If it is an oxford type shirt I would probably cut off the excess fabric.

^^^that is a much better tutorial, I didn't realize this was an actual thing I though I made it up baldy[1].gif he does it much better anyway, I wanted to go for a more extreme cutaway collar than him though.
