What are some good brining recipes that you guys use for the thanksgiving turkey?

Add some sugar to offset the saltiness, and you're done. Simple. Easy.

Make sure to use kosher salt, there is some crap in the standard salt that is less than stellar. I like to add a few sprigs of Sage, really the sky's the limit. Sage, an orange, some soy (it does not leave any real soy taste but does give a nice crispy finish to the skin) and garlic have all been used to great effect. Just remember that the brining makes it cook much faster, so don't burn it.

Keep in mind that the brining proportions will depend on the type and brand of salt you use.

I'd also suggest you air dry the turkey afterwards, kinda like what the Chinese do with their Peking duck, to get that crispy skin on the turkey.
