Try wearing you new shoes a few times and observe the wearing at the toe after each wearing, If you see that the toe is wearing at a quicker pace than the rest of the sole then the sunken metal toe plates are appropriate. I find that the toes on doubled soled footwear normally wear quicker.
I suspect there are 2 reasons for this:
1. Double soles are heavier.
2. They are less flexible than single soled.
Also, the larger size lace up may contribute to wearing the toe prematurely.
Sometimes it's all about the wearer's gait and strictly that. Could be the case with you as well.
