Making a House Curry? Jamaican Style

Anyone ever venture into making their own curries? I know a lot Jamaicans who have curries that they put together themselves. My father was Jamaican but didn't like Jamaican food and my grandfather thought the practice useless. Still I'd like to give it a try. I have the seasonings I like down so far but not sure if I should use tomato and scotch bonnet peppers. The problem with tomatoes is sometimes they impart too much moisture.

I prob wouldnt use fresh or canned tomatoes (whole or diced). However, a couple of tablespoons of tomato paste, cooked down, would likely add a nice depth of flavor to the curry.

So obvious but yet it never crossed my mind. Thank you. I use tomotoes in my seafood curries with good results, but when I made it with chicken it was to watery this should solve that.

This thread sucks because...where am i going to find Jamaican curry to satisfy my craving/curiosity?

What is Jamaican curry like? Any basic recipes? I generally like other curries, so I'd like to try some Jamaican style curry sometime.

It is similar to Indian curry except Indian curry is browner, has a more liquorice note and uses cardamom. Jamaican curry has allspice, more turmeric and mustard powder which makes it yellower. Jamaican curry is also a bit sweeter. Jamaican curries are also more stew like than Indian curries.

where do you get that around hartford? when i worked in east hartford i'd grab jerk chicken from rufus often, it's called something else now but i still call it rufus. never had anything with jamaican curry.

Man, Hartford probaly has the most Jamaican food outlets per capita of any place in the world outside Jamaica. My favorite favorite places for curry are Calabash on North Main, Apron Strings on Blue Hill or Jahm Ske's in a Plaza on Upper Albany across from The Artist Collective. I personally do not eat Jamaican food in Greater Hartford made outside of Hartford they tend to tune it to none Jamaican tastes, the fare you get in Hartford is generally superior. You could go to the Roti House which is on the Windsor line and get the Guyanese take on Curry.

I have a recipe for making your own curry powder if you really want it. Heavy on the turmeric and cardamon, but it uses apples and coconut milk for extra sweetness.

i doubt that rufus catered to the white folk or to the non-jamaican tastes. the people cooking it, in the biggest dive of a place i've seen, looked pretty authentic. every time i ate the jerk chicken my lips would burn for the rest of the day. before i got used to the spiciness i had to buy two sodas to go with the food. i mean they didn't even sell the beef patties, only pork, chicken and ox tail.


oh man, i wonder if roti house is what i tried at the caribbean fest downtown, they had awesome fried shark nuggets. they can put some "gravy" on it that made it really good. they were guyanese and were on main st...
