Paneer Bhurji and Aloo Gobi are great and pretty easy to make. On the Italian side - pasta and pizza to your hearts content. I've made gnocchi al pesto for vegetarian friends before, and it went over really well.

Interestingly, many Italians do not 'get' the concept of vegetarianism. Their meals are naturally vegetable-centric, and they often misinterpret 'meatless' to mean 'no secondi' (the meat or fish course). I've heard vegetarians question their Italian hosts at great lengths to ensure that there's no meat in their meal only to get a soup/stew/pasta containing the dreaded flesh. "WTF! I thought you said there's no meat in it?!" "There isn't - just a little pancetta for flavour!"

haha.

Here is a delicious sandwich recipe:
Take focaccia bread and cut it in half. Spread basil pesto on both sides, place a roasted red pepper and fresh mozzarella cheese and put it in the panini grill for a bit. Eat.

No fake meat products for me either. I prefer a nice truffle risotto.

THE FRIED PEANUT BUTTER AND BANANA SANDWICH.

I just made this for breakfast and it is delicious!

I'm thinking of these simple vegetarian recipes with big flavor for dinner:

  • Spaghetti with olive oil and garlic and
  • Oven broiled sliced tomatoes with topping of jalepenos, onions and grated cheddar, swiss and mozzarella cheeses

..........and a glass of Chalone pinot noir.

Hmm I've been a vegetarian for six years or so. Has not much to do with the meat is murder bs, although it's an added bonus. I eat some of the "fake meat" stuff. I would say it's used more for texture than anything. I use morningstar grillers "sausage crumbles" in pasta, gives it a nice smokey taste. Being a vegetarian for me totally changed the way I approach food, which was my goal. Never tempted to eat crappy fast food among other things.

Could anyone here marry a vegetarian? I don't think I could, even if she was the hottest girl in the world. It would drive me absolutely crazy.

One of my friends married a vegetarian. He and I sometimes go out for beers and dinner. Last time we did so, he ordered a vegetarian sandwich (several kinds of cheeses, lots of veggies, etc). I'm a bit concerned for him. We talked about it, and he said that he doesn't eat much meat anymore because if he buys meat, it has to be in small quantities, because it would be only for him. Then he'd have to cook two separate dinners, etc.

Not the lifestyle I'd want to live.

If she were really, really cool, hot, amazing, beautiful, considerate, non-judgemental, and into me - I could totally eat a vegetarian.

Haha, very true. Their perspective is quite different from ours. I always warn my vegetarian friends about this kind of thing.

In addition to Indian (which I love), Greek cuisine has a lot of fantastic vegetarian dishes.

Look out for Mollie Katzen's cookbooks, especially "Vegetable Heaven".
