So I was in Amsterdam and went to the Bols museum. Picked up a bottle of the Old Genever, basically a predecessor to gin. Although I love G&T's, I'm at a bit of a loss for what else to do with the stuff. Any suggestions?

Since no sane person in Holland would buy this stuff for consumption with the elderly as an exception i'm not surprised that you're at a loss
The staple drink of my fraternity is oude jeneverso I do know some ways to consume it, but it still is a though drink to conquer.
Straight up, make sure you freeze the bottle first, we keep them in the fridge way below zero to the point that they become less liquid. This is actually the best way to drink it, and you can actually sip from the shotglass... Its still an acquired taste though.
"duikboot", the submarine in English, Just fill up a shotglass with oude jenever and dump it glass and all into a glass of beer.....It destroys your beer, but you as well
All the normal varieties of doing shots with liqour apply, allthough I can imagine a few more pleasant drinks
