Parmesan crusted chicken cutlets and my first attempt at ratatouille. Unoaked Chardonnay. Peaches and whole-wheat 'shortcakes'.

This afternoon we did it up panhandle style. Oysters steamed, raw, and rockefeller. Fried gator tail, fried softshell crab and fried green tomatoes. Delicious.

Todays evening meal was a humble insalata caprese: meaning (in my interpretation) tomatoes, young onions, mozarella cheese and fresh basil leaves with s&p and olive oil (extra vergine!)...together with half a baguette and some wine...

^^ Along similar lines, it's still pretty warm where I am to cook a multi-course meal, so made a simple pasta: dropped spaghetti into the pot, and in a bowl mixed some diced tomato, olive oil, garlic, scallion, italian tuna and a bit of grated parmigiano. When the pasta was cooked, I just tossed it with the 'raw' sauce. Fast, filling and tasty.
