Front: Chanterelles grilled with a parmesean custard and pickled ramps and ramp jam.

Rear: Purslane salad

Not pictured: my favorite of the dishes last night which was a pastrami cured salmon with a scallion cream cheese and homemade pickles.

Beluga lentils, seasoned with tomatoes, red onions, parsley and garlic with Ottolenghi's roasted eggplant and goats curd. Served on bed of soft polenta.

And washed down with a cleanskin Mornington Peninsula Pinot Noir.

I'm a neanderthal, but I prefer my burgers on a flattop or cast iron skillet.

Did some sous vide short ribs. Aloha shoyu (Hawaii's shoyu and great for cooking with), fish sauce, sesame oil, garlic, onions. Man, hard to miss with that.
