they turned out ridiculously juicy and good. the veg roasted in the same pan was great. i didnt get the skin that dark but it was still nom.

Norwegian sea trout and a plebe salad. I hadn't seen this fish before. It looks like salmon but the flavor was a more mild.

despite how horrific that darker broccoli looks, I'm laying here in bed at 3:30am with a craving for some steamed broccoli right now. :(

it's worse because there's a nice head of broccoli in the fridge but I won't get to enjoy it until tomorrow at the very earliest. :(

Manton, looks fantastic.

I'll post a pic of an experiment I just completed. Took a pork belly and rubbed it with my brisket seasoning and pink salt. Rolled it up and put it in the fridge for a week then smoked to 155 internal. My god, :drool: Melts in my mouth like some sort of lardo.

Yeah, it was half a just cooked batch and half a previously overcooked batch. yum.

Actually, Köttbullar can be quite tasty. Fast food-like, but good.

Okay, this was my experiment. It was exceedingly good and light.

This was tonight's dinner. I took a few strips of bacon and slowly rendered them. Diced an onion and sweated it in a few teaspoons of the bacon grease, then added spinach and wilted, then removed. Put another couple of teaspoons of the bacon grease back in, added shrimps, sliced garlic, and toasted pine nuts. Cooked shrimp through, added onions and spinach back in. Plated and dusted with a bit of Parm. Was very good.

Matt, the negative space was with you in mind.

Paired with a Santa Lucia Highlands Chard from Loring. Perfect pairing.

Easy night for me, cream of navy bean soup with bacon lardons. Mid-day brunch was a "Hallow-weenie" hot dog from Shake Shack. Both were nice.

Made some Albondigas today. The sauce on the picture is a little too much reduced, added more tomatos after. Tasted really good, lots of Ras el-Hanout and Pul Biber in it.
