I was just in a 99 Ranch Market in Dallas and they were selling live turbot. Should I assume that's the same fish MGM is preparing?

tilapia is weirdly expensive here. "Expensive" is all relative, but tilapia at Fairway is like $8.99 a pound which seems like a lot for a fish that you could basically breed with nothing more than a kiddie pool and a garden hose.

That's likely farmed turbot, from either Chile or Canada. The fish I had was wild from France, so probably doubtful you would find it live in Texas. Easily my favorite fish.
