Surprisingly great. I also wasn't sure how much I was going to like it, but it started to make sense as I was putting the dish together. First, the parsley oil with the touch of garlic, and then the broccoli, which married incredibly well with the truffle. Of course, I did pause briefly before adding a few tablespoons of chopped white truffle to a bowl of broccoli, but it really worked. Then the sweetness of the scallops. Really incredible and unusual dish. That book has yet to fail me once. However, the poularde was my favorite dish tonight.
