What did you eat last night for dinner?

A puppy peed on my mattress today. Made me upset.

I had a fifty top walk in, completely unannounced, while I was in the middle of cooking for another 35 top. This was done by myself and one other person.

That sounds very difficult. The largest party I have ever had to deal with was 32 and that was only once and a long time ago.

Also, there are never only two of us there. I think that would be impossible. We need at least five and always have more than that.

It's unheard of to have two of us there on a Friday or Saturday. But such is life.

But seriously, who shows up as a FIFTY TOP without reservations?!

^have no idea how you pulled that off. i remember cooking for like 80 ppl and it was a ***** even for 8 of us (although you clearly have the advantage in experience in experience and skills)

i made ramen from scratch from the lucky peach magazine. the broth was modified from the momofuku cookbook (whole chicken, ham hock instead of neck bones, kombu, spring onions, onion, pulverized shiitake mushrooms). tare from left over pork bones, bacon ends, korean googgangjang (i figured it was pretty close to usukuchi shoyu), sake, mirin. alkaline noodles (a ***** to make, good but not worth the effort. never making these again). roasted pork belly and boston butt. menma. softened onions. some nori bits. chopped green onions. hanjuku eggs (these were damn delicious)

i guess it's a kind of shoyu ramen but pretty porky. pork products from a local pig farm owned butchery (mixture of mulefoot, tamworth, berkshire). marbling on shoulder was amazing. bacon was great. unfortunately only pictures of finished product (knifework not worthy of sf, but w/e. tasted good). need to find where i put it.


the first bowl was great, but really ***** and got full by the second one. still a little room for green tea icecream.

have tons of pork stock now. mmmmmm

It was my gf's table. Theyre country club members so of course they were demanding, but according to her they tipped incredibly well for country club members. About fifty cents each. A $24 tip on an unannounced fifty top.
