I used some Adobo seasoning last night. It's basically just salt, garlic powder, black pepper, thyme, and a bit of turmeric for color.

Inspired by this thread plus some great looking jalapenos at the farmer's market yesterday, I'm making some guac this week.

How did you smoke that chicken?
It's simply oak smoke and is basted with garlic oil.

I would have thought smoke would have imparted a much less appetizing color.

seriously -- coudln't be easier. it really is just oak smoke (and just chips, not logs). that and, of course, perfect technique.

If you notice no physical loathing in yourselves when you meet with certain words and tricks of speech in our journalistic jargon, cease from striving after culture; for here in your immediate vicinity, at every moment of your life, while you are either speaking or writing, you have a touchstone for testing how difficult, how stupendous, the task of the cultured man is, and how very improbable it must be that many of you will ever attain to culture.'
