When I say I like Uno's I am talking about the original one. Uno's here isn't deep dish I don't think.

I make my deep dish pizza sous vide with no liquid in the sous vide for 10 minutes.


This is, what, you vacuum seal it and then hit it with a hair dryer? :confused:

National chain unos is gross. Its got to be unos or due across the street....totally different pizzas from the chain crap.

I like the deep dish. Its not the kind of thing where you are feeling like a pizza and so you grab some unos/lous/pequods, but I do enjoy eating a literal pie of pizza. Not a big fan of stuffed pizza from giordanos's with the extra layer of crust (I realized a couple weeks ago that most of my friends didn't even know that there was crust on top...they just thought that nasty soggy bread layer was part of the cheese), but edwardo's stuffed spinach is pretty good.

For a more regular deep dish (really more of a "pan") pizza that can be eaten frequently and isn't sopping with melted cheese, I really like Davannis in minneapolis/st.paul. Their pan is somewhat approximated by the non-stuffed deep dish option (maybe they call it 'sicilian' or something) at paninos on broadway/halsted and waveland.

No, sorry, you have had this explained to you a number of different ways, ranging from scientific to experiential to authoritative. You have rejected them all out of sheer stubbornness.

What is very plain to me is that your frequent professions that "I know I have a lot to learn, I am just trying to get better" are BS. You say that because you know it is the right thing to say, like what Crash Davis tutored Nuke Lalouche to say once he got to the show. You don't actually believe a word of it. You think you know everything and are already Top Chef and when challenged you fall back on the same sarcastic trope that every argumentative Netzian uses "Ooh, sorry I have insulted one of the web gods, pardon my lese mageste."

Then usually a meltdown follows. At least you have avoided that this time, which is progress.


I have said this exact thing before each of his meltdowns. Although not nearly as cleverly as you put it
