Fucked up (at least presentation wise, it still tasted great) the sole because I didn't stack the fillets skin side to skin side, so they curled and didn't remain an attractive rectangle. I also didn't realize that they just do a bread hat. I think I had seen this picture a while ago, and thought it was a breading (https://plus.google.com/photos/118237905546308956881/albums/5307849943677518369/5307852933217010914?banner=pwa), rather than like zees. http://vimeo.com/16120448

Sauce was excellent though.

Supposedly the tuna is from the same supplier that The French Laundry uses ?? The waitress gave us a big spiel and i didn't listen to all the details. Either way, it was delicious.
