What did you eat last night for dinner? - Page 1474

I used to cook a lot more before we had kids; my turn at the stove tonight was out of the ordinary. Browned some pancetta, removed it, and threw some chicken breasts (sorry, the missus and the kids don't do dark meat...) in the pan. After the chicken was done, made a sauce with shallots, butter, white wine, and the pancetta. Honestly, not much to look at, but tasty. Broccoli for the kids, spinach and arugula salad for me and the missus.

If nothing else, it was better than the pizza we typically have on Friday nights.

A little off the menu tartare for lunch today with some (housemade) pickled veggies and greens.

Mind messaging me your pickling recipe/method? Thinking this may be my year of pickling.

CG, this was from lunch out today at one of my main places. I would guess they used that quick method I've seen written about here, maybe by Matt? I've not done any pickling recently but was using the method from Ruhlman's Charcuterie book. Thinking of maybe putting some down next weekend.

The missus made slow-cooked chicken tacos and a cream-based corn/potato soup with bacon. We decided at the last minute to puree and strain the soup. It was all very tasty.

Made a kale and white bean soup. It is delectable.

Obviously spam[1].gif's crispy fried chicken recipe. So good. Game hens are perfect for it.

Most definitely.

I cooked it because of the Super Bowl. Yesterday evening, I thought that meetloaf would be appropriate too, and since I've never cooked it, and this is/was my 3rd time cooking fried chicken, it would probably more appropriate. I guess I will cook it in the next few days. If anyone has got a good recipe, feel free to pm me. Else I'll just google "la times meetloaf recipe".

Looks great, Mordecai. Are those lupini beans?

They're just lentils from the arabic section of the supermarket I go to (lots of Lebanese Christians in my hood). No idea what kind. There's an identical looking kind in the hispanic section, and it just says "lentils" on the bag.
