I don't think lamb fat is rubbery at all. At least the fat you get on the rack or saddle isn't. I eat it specifically because it is so melting and delicious.

On Monday I made sausages out of pork belly, cabbage, onions and lardons. Actually I made them Sunday but ate them Monday. I'd let you have a few for lunch, but you could probably find something closer.

I fried shredded sweet potatoes in bacon fat last night for a makeshift porky sweet potato hash browns. They didn't crisp the way white potatoes do, but it was pretty delicious.
