Dory looks nice. So does the sauce with the veal. Is it serious product?

Probably Himalayan veal. I agree, two and threee look good. (would prefer less Piob'esque plating though, lol -- I understand it's intended though)

Yea it's great. Much better than most of the "natural" veal shit that 's infiltrated the market lately.

I blame the germans. I was looking at this guy's book so it was stuck in my head. http://www.flickr.com/photos/alifewortheating/6165195169/
I would prefer plates with larger wells, but I don't have them.

It actually works, just not my preferred cup of tea.
Speaking of Germany, we now have 1 more 3* (10) and Hamburg has one more 2* and two new 1*.

Kitsune Izakaya received a Big Gourmand... not sure how I feel about that.

Kevin Fehling (35), La Belle Epoque, Lübeck.

Hamburg's new 2* is Seven Seas (Karl-Heinz Hauser), next to Haerlin and Jacobs.
(Just for completion -- the other new 2* are:
Tim Raue, Restaurant Time Raue, Berlin
Matthias Schmidt, Villa Merton, Frankfurt am Main
Jens Jakob, Le Noir, Saarbrücken
Denis Feix, Il Giardino, Bad Griesbach
Dirk Hoberg, Ophelia, Konstanz
Douce Steiner, Zum Hirschen, Sulzburg)

10 3* (all-time high)
twice as many 2* restaurants as in 2010 (36 total now)
209 1* reustarants (of which 29 are new this year)

Overall, 2nd in Europe after France.

I am not a fan of that style of plating: tweezing and squirting from squeeze bottles.

I used a parchment cornet, but I agree. It was fun to mess around with though. But stuff cools down a lot faster (and it takes longer to get it all on the plate).

E.g. this is fucking hilarious

Of course it's fun. I have just come to appreciate more simple presentations.
