Take a pound or so of green lettuce, I used escarole, and blanch and refresh it. Squeeze it out, put in the blender and pour over about a cup and a quarter of boiling chicken stock. Blend and strain. Season with nutmeg. Then to finish just reheat to a boil, add some cream and emulsify in some butter.
