you get a thick skin writing in public. i think they pretty much read the review they wanted to dislike -- that this stuff was silly (not that i'd argue too much) -- but missed the review i'd intended -- that new tricks without improved results are just tricks. or maybe i wasn't clear enough.
i've got a little history lingering on that site from when i was a member. hard to believe now, but at one point, michael ruhlman, paula wolfert, tony bourdain, dorie greenspan ... a whole lot of pros were regular contributors and it was a pretty amazing place. really bad moderation drove us off.

Well, I think it is mostly salvageable:



Oops, I unsalvaged it. Also, it so cool and modernist how MCaH doesn't want you to actually put much cream on a cream pie. AWESOME!!!



Money shot, baby!



All in all, the MC version of pie crust is definitely far superior to anything I have tried before. And the custard is perfect.

What do you mean is it really that bad? It is a tragedy on the scale of 9/11.

I should probably put up or shut up. I just think the soft focus moneyshot of a disaster like that is too funny.

it's actually artistic because it encapsulates so many problems so vividly. the photography's so carefully composed, but the food ... and then on the culinary level, YOU CAN'T ROLL OUT A FREAKIN' PIE DOUGH? and you're making foams and photographing them? it's really quite meta.
