The technique actually looks pretty good, but the ingredients don't look so fresh. I think part of the reason is because you had to sit in the dining room, so by the time the sushi arrives it might have been 10~15 minutes since the chef started the preparation.

I recently tried a michelin starred sushi place in Los Angeles, and they served the whole omakase set on a single plate although we sat at the counter. I wonder what the judges were thinking in giving them a star.

I'd imagine it was so that one could just go up and down the line with the Kikkoman shaker without committing the traditional Japanese offense of wasting soy sauce? *clasps hands and bows deeply*

I just love how its a complete 180 from what normally gets posted here, its food pared down to its natural purpose (sustenance) with no pretense of it being anything else. There is purity in that disgusting awfulness. Its locavore minus the foodie bullshit. Or I could just be a masochist.

I'm pro dead animals all the way. I find the heads to be a nice touch.
