Ok, I have a pommes anna copper pan.  How do you make them so crispy?  Take off the top halfway?  Thanks.  The chicken looks great as well, in fact everything! drool.gif!!

You do not need a special pan for this, though I have one, I never use it.

Grilled some flap steak. That is a fantastic cut of meat but I can only get it at one traditional butcher's shop here.
