It really depends on the dish, and the type of sauce. I think yours just need a more "natural" look to the way they're put on the plate. Try using a spoon and drizzling in a circle. Or, like with the asparagus dish, just pour a larger amount directly over the asparagus, and nowhere else. It will just make everything look cleaner, in my opinion.
