I plan to find out soon. Was going to wait until I had a working vacuum sealer but the instructions are pretty straightforward.

I am thinking about building mine in two pices: one with the heating elements and pump that clips onto the side of a vessel and the other that contains the temperature controller and relays. This will let me reuse the temperature controller to make a homemade smoker (or I suppose make a temperature regulator for brewing beer if I ever decide to do that).

Lunch, I ate at Satsuki downstairs, ate the spaghetti napolitan (hi Sfield) with the soft boiled egg on top, had a green salad. Somehow took like an hour. Snacktime this afternoon while sitting around - these little fruit tomatoes premiered at Kyubei like 10 years ago for $40 a piece, nowadays they sell them everywhere and they're like $7 for 3 and are the size of golf balls.

Just met ChicagoRon for a crawfish boil at McGee's in Chicago. Freaking delicious. $20, all you can eat. I haven't sucked that much head since Conne came to Chicago for the weekend.

Okay, big inputs from FG and iammatt here. I did not catch pics of the shrimp course plated but it was the shrimp off the skewer with crisped lardons. Also, I did not have the crispy lardons over the tomato course for the pic, which is a shame as they looked great and made for a perfect flavour profile for that dish.

Okay, what can be better than home made bacon freshly smoked? Well, FG got me to grill shrimp so I thought, why not finish this thick sliced bacon pieces on the grill? Oh yeah, that's right. Grilled bacon.

Finished with sous vide eggs @ 148. Yolk was a perfect custard consistency.

and how did you spend your last evening in Chicago Kyle?

We parked ourselves at the bar at Frontera Grill and worked thru the apps until midnight.
Lamb & pork chili and the Tostaditas de Tinga de Pollo were amazingly good.

If they had Basque cake, it would nave been a 10+
