One of my favorites: garlic injected pork tenderloin seasoned with cumin, cayenne pepper, salt, pepper. Brown on all sides on frying pan, then add white wine, chicken stock, mushrooms or eggplant, a few cloves of garlic, fresh cilantro; then finish everything in the oven until internal temperature of about 145 F. Eat over a bed of white rice. Steamed veggies optional. It's easy, nutritious, and delicious. I make variations of this every week or two.
