Every time I make tartare, I make it a little bit different. I haven't seen the Julia Child's recipe, do you or anybody else have it? With this one, I used tri-tip beef. Usually I use top sirloin, but they were out, so I decided to try a different cut.

Mixed it with a little bit of Worcestershire, cognac (mostly to clean the surface of the meat in case there was anything growing on the surface), egg, capers, shallot, parsley, anchovy, Dijon, and some black pepper. I got a bottle of gherkins recently, so I might try that next time. One restaurant I ate at used olives, which I thought was interesting.

I really like raw beef, and I'm starting to find cooked beef less appetizing.

went to a saudi place, in riyahd - most times I am here we just have lebanese food, this time we went for the local stuff. camel, and mutton cooked in a rice dish. not bad, but nothing that I would go out of my way to find again

what did the camel taste like?

i think my favorite cuisine from that region is Yemeni.

Last night:

Started with an amuse of chorizo, white beans, and some other stuff. Followed with a frise salad with bacon, and a poached egg. The main course was a hanger steak with spinach, and and a delicious potato that was cooked with bacon and some other things (dont know the name of it in French).

that was a salad lyonnaise. One of my favorite things to eat.

Didnt mean to write poached. Was nursing a very bad hangover when writing that.
